Ingredients (according to the number of people):

  • 1 or more yam tubers
  • 6 large fresh tomatoes
  • 2 onions
  • 6 eggs
  • Olive oil

Preparation:

Yam:

Peel and wash the yam.
Cut it into medium-sized cubes or slices.
Put a pot with salted water on the fire.
Add the yam cubes and cook them. Check the cooking progress after 15 minutes to avoid overcooking.
Drain the cooked yams and keep them warm.

Scrambled Eggs with Tomatoes:

Wash and cut the tomatoes into dice or julienne.
Peel and chop the onions.
Heat a little olive oil in a frying pan over medium heat.
Sauté the tomatoes for a few minutes.
Add the chopped onions.
Simmer for 5 minutes.
In a bowl, beat the eggs with a little salt and pepper.
Pour the beaten eggs into the pan with the tomatoes and onions.
Stir constantly, adding spices to your liking (garlic, pepper, ginger, anise, etc.).
Taste to adjust the salt content and add more if needed.
Add chili powder or green chili for aroma, color, and to enhance the flavor.
Check that the eggs are well scrambled and do not stick to the pan.
Cover for a few minutes and then turn off the heat.

Plating:

Serve the yam on flat plates.
Top with the scrambled eggs and tomatoes.
Garnish as desired with tomato, onion, pepper, or whatever you like.

Tips:

You can add other vegetables to the tomato sauce, such as peppers, zucchini, or carrots.
For a milder version for people who don’t like spicy food, instead of preparing without chili peppers, place the fresh chili peppers on the surface of the tomato and egg scramble at the end of cooking.
You can replace olive oil with sunflower oil, peanut oil, or even palm oil (red oil) if you prefer.
Sprinkle with fresh chopped parsley for a touch of freshness.
Bay leaf can also add a touch to this recipe.
